Brown Rice Tart with Tomato and Feta


Some times even if you are not a vegetarian, a light dish is appealing. This brown rice tart is great tasting, easy to make and healthy. The recipe is one of my favorites from a vegetarian cookbook. This dish doesn't necessary have to be for vegetarians, but everyone who loves preparing, serving and eating great food.


Ingredients.

Brown rice 1 cup (200 g)
Grated cheddar cheese 1/2 cup (60 g)
Egg lightly beaten 1

Filling

1 Pint grape tomatoes halved
Garlic cloves unpiled 6 or 8
Olive oil 1 tbsp
Crumbled feta cheese 1/2 cup
Eggs 3
Milk 1/4 cup
Parsley 2 tbsp ( chopped )
Basil 1 tbsp ( chopped )

Preparation

Boil the brown rice for 35 to 40 minutes or until tender. Drain and leave to cool.
Preheat the oven to 400˚F. lightly grease a 10 inch pie tin or dish.

Place the tomatoes onto a nonstick baking tray, cut side up, along with the unpiled garlic.
Brush tomatoes with the olive oil and sprinkle with the herbs. Bake for 30 minutes and set aside to cool slightly. Reduce the oven temperature to 350 ˚F.


In a mixing bowl, mix the rice, cheese and the egg.


Press into prepared pie dish.

In a small mixing bowl whisk together the eggs and milk.


Arrange the tomatoes, squeeze the garlic out the of their skins and arrange with the tomatoes and feta cheese.

Gently pour the egg mixture over the tomatoes. Bake for 45 to 50 minutes in a 350˚ F oven.

It can be served hot or cold. As a main dish or as a side dish.
