Apple-Oatmeal Cookies






My son Brandon adores oatmeal cookies. I always have the cookie jar filled with oatmeal cookies. From all the recipes I have tried those ones are by far his favorites, Cass for example loves the tofu oatmeal cookies so, I have to alternate the recipes so everybody is happy. Luckily, Alex loves both kinds the apple ones and the tofu ones.
Here are Brandon's apple oatmeal cookies. I used home made apple sauce, but the one bought from the store works just as well.


Ingredients:


  • 1/2 cup butter or hard margarine
  • 2/3 cup apple sauce
  • 2 tbsp apple juice
  • 1/2 cup brown sugar or raw brown sugar
  • 1 tsp baking soda
  • 1 tsp pure vanilla extract
  • 1/4 cup boiling water
  • 1 1/3 cup rolled oats
  • 2 cups all-purpose flour
  • pinch of salt


Preheat oven to 400˚F. Line 2 cookie sheets with parchment paper or silicon mat, set aside.

Place the butter, sugar, apple sauce and apple juice in a food processor.
                            

Blend until smooth and fluffy.

                           

In a small bowl mix the baking soda, vanilla extract and water. Add to the food processor and mix well.
                           

In a different bowl mix together the flour, oats and pinch of salt.




Pour the apple mixture into a large bowl. Gradually stir the dry ingredients into the apple mixture.



Drop spoon full of mixture onto the prepared baking sheets, ensuring that they are well spaced.



Bake into the preheated oven for 15 minutes or until golden brown. Remove to a wire rack to cool completely.



Serve with a cup of hot chocolate.

They do represent fall, and made with home made apple sauce are delicious and the house smells amazing when you bake them:)

Hi Rekha,
You know what? You can use quick oats as well. As for making apple sauce is easy. Peel and core the apples ( I used 4 golden delicious ) cut them up in small cubes and place them in a small saucepan with about 1 cup of brown sugar and 1/4 cup of apple juice. Bring to a boil and stir until the sugar dissolves. Cook over medium low heat for 30 minutes or so... You can add 1 tsp of cinnamon. When the apples are soft take it of the stove and cool them a little. I used a hand blender to make it smooth.

They are both good, i personally prefer the tofu ones, but again I'm a vegetarian.......

I recently made something like this, but with grated apple, tasted alright freshly baked but after they've cooled down, they were soft in the middle, because of the apple I reckon. Your blog is cool, real X'mas feeling!

Yes, you are probebly right, the grated apple with keep them overly moist, maybe dried apple would it worked better:)))

Hi Laura! I was about to try this recipe but don't have apple juice and don't like to drink it so didn't want to buy a whole thing just for 2 T. Do you recommend just keeping it out or substituting something else? Also if I'm using unsweetened applesauce do you recommend increasing the amount of sugar I'm using? Thanks a lot! Looking forward to making these.

Hello Gigi,
I'm glad you want to try the recipe. Don"t worry about the apple juice, you can add 2 Tbsp of water instead. As for the sugar keep it at the same amount, I always use unsweetened apple sauce in my recipes. I hope this helps. Happy baking!
