Vanilla Pancakes



Breakfast! I think is one meal that gets so ... overlooked. A bowl of cold cereal, a cereal bar on the go and we are done. Well... I like breakfast, I think is the most important meal of the day.
You don't know what the day brings but, if you had breakfast you are ready to face it.
Even kids are performing better in school if they had a good breakfast. My foodie friends probably have seen my favorite quote.

My mom used to say the same thing to me when I was a child, and my mom is always right. So... I don't overlook breakfast.
Pancakes are often on our the table for breakfast.Easy to make, tasty and I have one base recipe and from there..... so many variations, the sky is the limit.


Ingredients: makes bout 22 pancakes ( I have a big family).


3 cups all-purpose flour
6 tsp baking powder
2 tbsp granulated sugar or you can use Splenda ( sugar substitute)
1/2 tsp salt
2 1/2 cups milk
2 eggs lightly beaten
5 tbsp butter melted
2 tbsp pure vanilla extract .


Sift together the flour,salt, sugar and baking powder in large mixing bowl. Add the lightly beaten eggs, milk, vanilla and melted butter.


Mix very well. I got my favorite Little Chef to help. Still in his favorite reptile PJ.


Set aside for 10 to 15 minutes, to thicken. In the mean time prepare your pan by lightly grease it. I use the griddle, much faster.



Pour about 1/4 of a cup or if you like bigger pancakes 1/2 cup onto your pan and cook for about 1 minute, flip over and cook until golden brown.


Serve with your favorite jam or sirup.
As I said this is just the base recipe, from here you can build up. Substitute vanilla extract with some orange zest and 2 tbsp of orange juice ( preferably with pulp) and you got orange pancakes. Or add 1/4 cup of shredded coconut (you might need a little more milk if is to thick) and you got coconut pancakes. Fresh blueberries...... and the list goes on and on.
Most important DON'T SKIP BREAKFAST!

is it possible to store some of the batter in the fridge? how long would the batter last?

Hi Rekha,
I never stored the batter in the fridge,but if you have pancakes left over you can freeze them in a ziplock bag just put some parchment paper between them.
When you want them just put them in the toaster.
