Today for breakfast my boys asked for egg sandwiches. Because I had fresh croissants I decided to make the croissant baskets rather then sandwiches. This idea comes from a Rachel Ray show. I only got to see the end of the show so I'm not sure what she put in it, but I liked the presentation.
Those are my croissant baskets.
Ingredients:
3 croissants cut in half
1 cup of grated cheddar cheese
6 slices of bacon cooked crispy and cut in small pieces
6 eggs
salt to taste
fresh herbs to sprinkle ( optional)
Preheat the oven to 375˚F. You will need a jumbo muffin tin or 6 ramekins.
Cook the bacon to desired crispiness and cut into small pieces.
Cut the croissant in half and place each half in the muffin tin or ramekins pressing the ends together to make the shape of a basket. Divide the cheese equally between the croissants, add the cut bacon dividing it between the 6 half's of the croissants.
In a small bowl break one egg and carefully pour it in the croissant basket. Repeat with the remanning eggs.
Sprinkle with salt and fresh herbs if you desire.
Bake for 20 minutes or until the egg is set.
Enjoy!

Very innovative, Laura. This is such a great idea. I have a catered breakfast to do later this month. I might put this on my menu. I've seen a number of "egg muffins", but this is unique and looks so much nicer. I am always looking for different ideas for breakast/brunch.
