Oven Baked Potato Wedges


Potatoes! I never met a kid that didn't like fries. Mine are no different. The only problem is I'm not to fond of them. Love potatoes: baked, boiled, mashed potatoes etc... but not fried.
So potato wedges is the substitution to fries in our house. I tried a few recipes but none of them fit the bill, the boys liked them but not love them. They were not crispy enough.
They wanted the wedges soft inside and crispy on the outside. I played with the ingredients and techniques a lot until finally something clicked. Bread crumbs! The ingredient that was missing, now my potato wedges are soft inside and crispy on the outside.

Ingredients:

10 medium size potatoes
1/4 cup vegetable oil

Seasoning:

1/4 cup sea salt
2 generous tbsp italian seasoning
1 tsp garlic powder
3 tbsp onion flakes
3 tbsp paprika
1/3 cup italian bread crumbs
Pepper to taste.

Preheat the oven to 400˚F. Line a large baking sheet with parchment paper.
Scrub the potatoes very well. Cut them into wedges. Place the potatoes into a large mixing bowl. I like to dry the potatoes before cutting them.


To make the seasoning, place all the ingredients into a jar or a small mixing bowl. You will not use all the seasoning. The remaining can be store for up to six months in an air tight container. Just make sure the ingredients especially the bread crumbs are fresh. It can be use as a dry rub for meat, or other recipes as well.


Add the oil to the potatoes, and sprinkle the seasoning mix to coat well. Place the potatoes in a single layer on the prepared baking sheet and bake for 45 to 50 minutes.


Serve as a side dish.

Yummy! I love potatoes any way they are cooked. Love fried, but not so good for us, so we do a lot of oven roasted/baked sweet potatoes over here! :) These look delicious!
